My websites tend to attract mostly north american traffic. Other than a site translation, what can you suggest as a good way to get more european traffic to my sites?

Host the site in the country you're wanting to target.
But I don't want to give up the US traffic, I want to add european traffic
There is a place in the Google webmaster tools to specify your target country... either all of your site or at sub-directory level. Not sure of effectiveness or even whether you would want to do this for an English-only site - anyone tried??
Cheers, Mark
Build a new website with new content targeted for those countries where you want to get your traffic from. Look at what the others do to attract visitors from Europe.
If you don't want to add new content or build something new visitors from Europe are not going to come to you.
I use bluehost "servers in us i think?" and get traffic from everywhere for my english sites. Dont think that the location of the server has much to do with it. I use bluehost and .coms for my Norwegian sites aswell and no problem getting visitors from Norway.
You could use sub-domains or create landing pages specifically targeting each country. On The Pokerkeep I use a page titled "Poker in Canada" to target my Canadian players and get good results from it. Most of my Google generic traffic coming from Canada lands on this page.

Great suggestions. tks!
Yep, poker content specific to various countries will definitely draw more visitors from that particular country. For instance, the EPT has tournaments in most European countries. Simply covering an EPT event in one of those countries should give you more visitors from that country.
Be sure to check out poker forums in different countries for content ideas. If it's in English but has a TLD from that country like .de, or .ca, you can get a really good idea what locals from that country are talking about.
