When someone signs up through your link, how much information is provided to you about them by the poker room? Surely how much they are depositing, right? Name? E-mail? Username?

This is different on every room. I am on the PAW network for a bunch of rooms, but for the rooms that I'm not I have the players initials on one, players username on another, and the rest basically no info. I don't think you'll ever see a real name or e-mail.

Hmm... the reason I ask is because I'd like to run a promotion where I award a prize to a random user who signs up through my link within a given time period. I'm looking to be able to PROVE that someone who signed up through me really did, because otherwise anyone could just say they did.
I know at Cake Poker you can see the players usernames, that could work for ya

Most rooms will (and should) keep their player info private. You could work out the promo with your AM. Get the AM to contact the winner on your behalf, asking the winner to contact you to claim their prize.
Talk to you AM. Many rooms can setup a tournament that is restrcited to your players only based on tracker. No password needed. If they are tracked to you, they can register. If they are tracked to someone else, they can't register.
