Default site offline after nameserver change on Godaddy

I rebuilt my site tennisbet.net on a different hosting account. The domain is still registered at Godaddy, but due to lots of off time, I decided to move away from Godaddy hosting. So I changed the nameservers in my Godaddy account, and now the site is offline.
Shouldn't the site be still online via the old hosting account while the nameserver settings are propagating - is this a Godaddy thing? That never happened to me with other registrars.

Yes, the site should still be online provided you: 1. left the files on the godaddy server, 2. installed the files correctly on the new server, and 3. entered the correct nameservers for the change.

Whois shows 1and1 as the new host. With the following nameservers:

    NS-DE.1AND1-DNS.DE
    NS-DE.1AND1-DNS.BIZ
    NS-DE.1AND1-DNS.COM
    NS-DE.1AND1-DNS.ORG

My guess is your issue is either #2 or #3

Well I checked my new hosting account after setting the nameservers at Godaddy. The problem is that after entering the domain as an external domain, it says "nameserver setting incomplete", and because of this I cannot assign the right directory to that domain with my new hosting service.
Strange, if your whois request already shows the new nameservers, why is my new hosting company (1und1.de) still showing this error?

Because whois is pulling the nameservers from godaddy, not 1 and 1. Why do you need to setup nameservers at 1 and 1? You should just be copying the provided namerservers into to godaddy.

I'm not familiar with 1and1, but I just did the same type of move from godaddy to hostgator (for the same reasons as you) and all I did was change nameservers at godaddy. Is it possible that 1and1 hasn't configured your account properly?

Yes that was the problem. In my 1und1.de account, the name servers were still showing as incomplete because I had to log out and log back in to my client backend , and then the domain was showing with "name servers set correctly". Btw I did not have to set the name servers at 1und1, just at Godaddy like you said. Now I can connect the domain to the directory where I did the fresh install, so it should be working any minute now. At least I hope so fingers-crossed ...
